Default LRP SXX MkIII with modified motors?

Hi!
Thought I kill two birds with one stone. Bought a LRP sxx mk3 and will put it in my cougar sv and then use it in a 1/12 pan car during winter.
My idea was to run the esc with rather mild settings and not use the "stock spec" settings for that motor. A 7.5 Orion. And then use it as it should be used in the pan car with a 10.5 motor.
My question is. Have I done a not so smart thing? Is a 7.5 too much together with 2s lipo even with mild settings?
