What do you guys use to cut out the shells as they always look perfect and crisp sharp lines?
Advice would be great. thank you.

to save slipping with a knife and making a mess (of the shell and yourself), I use a pair of very sharp body cutting sissors I bought from huntersystems

I just use a knife, score and snap. I found it took me longer with scissors and I had to dremel to smooth things off and even then it wasn't as perfect as using just a knife. Might not be for everyone though as you need to be careful and steady.

I cut mine out roughly with scissors then dremel them. Lastly sand the edges perfectly smooth as this stops them splitting
