More caster aids stability, and handling in bumpy sections.
Less caster increases steering drastically. Steering feels much more direct, the car turns tighter and faster.

Increasing total caster will provide more steering entering a turn but less on exit. Decreasing total caster will cause the steering to react faster and increase on-power steering. Taken from the set-up guide in the Losi xxx-cr manual.

I guess its all down to the make of the car. I had 5 degree castor on the old lazer zxr and the steering was poor into and out of a corner, so stuck on a 7 degree and was perfect in and out of corners. More worked better on this car.
