I was the same. Had two braking modes. Coast, or full slither to a halt, trigger as far forward as it would go.
I fixed it by limiting the brake to about 50%. Using the ABS feature on the ESC (no locked wheels) and fitting the trigger precisely to my finger using sugru. So instead of having to move my finger from the throttle side to the brake side before I move the trigger, it's just a mm of movement and the brakes start.
Adding drag brake instead of practicing is pretty pointless as it makes jumping and cornering harder than it needs to be. You'll also struggle to get exactly the right amount of drag, and it'll change depending on track conditions, tyre wear, line choice and so on.
