I can see ABC on both this and the motor so obviously need to connect those up together, do i just solder the wires onto the gold pots? Or are they supposed to be connected using something other than solder?
Also, what's the bit black piece of plastic coming from the + and - terminals?

No idea why but the manual for this ESC is never on the UK Warehouse webpage, however if you click on the same item from the international warehouse, scroll down and click on the "files" tab they should be there:
