Hi Dave,
Lipo's don't discharge as much as NiMH batteries do, so all i do is charge them up when I need them and that's it.
As for the amps going in...
Charging on a Lipo is CC/CV instead of Delta Peak. It charges at your amp rate until the battery gets to 8.4v (for a 2 cell pack). This is the CC (constant current) bit.
At this point, you are somewhere around 90% fully charged. The charger will then reduce amps to keep the voltage from going too high until that last 10% or so is done. This is the CV (constant voltage) bit.

This is normal for Lipo charging, nothing to worry about
