Sure you can use 4 holes.
But the pistons with 3 and 5 holes are "rounded" at the outside and so they simply work "better" than the ones with 4 or 6 holes.
And sometimes you want to have a bit "less" damping, or a "quicker" reaction. And so, as always: either drill or change the oil.
The jump between the 3 holes and the 5 holes is pretty big.
