By no means is this how you have to do it as at the weekend I did see someone have a low profile tyre mounted on a wide wheel as he liked the way it handled at the track he was running at

Exactly - and that's really where it comes down to personal preference, and why you have to try some different things and options to see what works best for you.
To me it's why it's worth having "options" - and instead of having only one tire option, I have a few different sets mounted up (low profile cut staggers on narrow rims, full cut staggers on regular rims, and even minipins or plain stagger ribs) to hand select tyres based on the track I'm at because they all perform differently.
