In theory several smaller caps would be better.
Example:
3 * 3300uF 16V caps (9900uF in total) would be better than 1 * 10000uF 16V cap
This is because using caps in parallel lowers the Equivalant Series Resistance (ESR) and means the cap bank can charge and disharge faster, improving the system frequency response.
In practice, It doesn't really make a much of difference. Its really all down to size and placement. I noramlly go with whatever I have to hand.
