Assuming the motor is not already getting hot, then gearing up (bigger pinion or smaller spur) is the easiest way to get more speed.

I don't know the track, and you seem to be running sensorless which is a bit different to most racers, but a 20T pinion seems rather small for an 8.5 in a 2WD. Go up a tooth at a time, checking temps and performance.
