The 5 minute time for each car does start when the car crosses the loop, not on number called, this is why the 10th or last car off usually waits an aditional second to get a clear run.
The 5 minute of the run, before the buzzer goes, starts from the end of the countdown - but cars don't finish until they cross the loop and the time for that car is above 300 seconds at that point.
