Be carefully with stainless, there are lots of different grades, and the cheap stuff (that's easy to work with to make things) is actually quite soft and will round out quite easily.
Been there, done that, got some M3 dome heads and countersunk some years ago, and they rounded out much easier than the high tensile steel ones, and were also heavier
