The hand brake approach is quite common with 2WD buggies and tends to be pretty quick, although perhaps less so with mid-motor.

Try lengthening the wheel base at the rear hub, this can have quite a dramatic affect on how easily the car rotates.

Also if the front tyres simply aren't biting enough, try mini-spikes on the front, but these will wear quicker and be less consistent that the staggers.
