That setup will be fine at Bury. My Dex210 is as competitive as anything else in 2wd there at the moment running with a 10.5t. The main straight isn't that long, and there is normally a tight corner in and out so the raw speed of a 6.5t doesn't help that much, and I find the 10.5t much easier to drive in the infield.
You certainly won't be the only one in 2wd running that esc and motor, and you won't find it slow. The only thing you might find is that being sensorless its not as smooth around tight corner as a sensored setup but it will be fine for a good while.

As for the battery - with that motor I'd expect you could run 3 full races without recharging so its more than fine! Just top up between races - if its a quiet meeting we have a short break between rounds to give you time to charge.
