Obviously I'm taking it too seriously, which is silly as it's just a hobby for me. I've always been quite harsh on myself with creative work, always telling myself it needs to be better, do it better! Why did you do it like that? etc

What I really mean is I can do the basics pretty well now (I think), but I feel I need to be adding more design elements to the work to have that wow factor, rather than just a nice looking shell.

You create good designs, something a lot of people who paint body shells seem to miss, they just chuck stuff down where as yours at least look designed ! The colours you use compliment each other and from what I can see in the pictures they look well executed. I'd say you should give yourself a bit more credit dude !
