It's the fact the colours we use are generally use are a bit more sparkly or pearlescent or fluorescent than you get on real cars and the camera's just don't capture it. I don't think it's the camera's fault, obviously if you photograph chrome it just reflects everything which the camera can capture but the pixels don't come out as Fluorescent or metallic or pearl, there is only so much you can do.

Suggesting how to light an object with how many flash guns / lights would be handy to know.

I've done this for 10 years, tried light tents, outside, umbrella's, softboxes, ironically the best results came form just having the flash on my camera, simple is the key I guess.
