it's cos you take a reading of the outside of the can, where the internal temp will be almost double,
ie do, one run temp it at say 60c do another and you can find it reading over the 100c mark.
best thing to do if you run a fan is temp it after a run, leave it for 5 mins then temp it again and see what temp you have, that will give you a much better idea what is going on.
