If I was outdoors I would probably be putting on something in the region of a 30T pinion on a 10.5 - Indoors by nature you need more lower end power so maybe drop 2 or 3 teeth.
I would try a 27 pinion at a starting point and if it's too soft lower down then lower the pinion and visa versa
