I can't answer all of your questions, I'm in a similar situation. My son was given a vintage Grasshopper recently which has inspired me to clean up and get my old Optima back on the road.
I've not tried them myself but I've read good things about the Core RC and Etronix stick radio sets (the new ones with the blue reciever seems the better system, FHSS I think). Both are the same, just re-badged. There is a £40ish set with little setting adjustments whereas the £80ish set has more adjustments than I would know what to do with.
I think any modern servo will work with any modern receiver, but I am happy to be corrected (a new servo may be my next purchase!).
I should add, I've bought a used Novak GTB esc and LRP brushless motor from here which are yet to be used in the car seem easy enough to use during my quick try out of the car.
