There is no 7 day return policy. When i worked for a particular network we NEVER cancelled and only exchanged if the product was faulty.
And as far as 'they would go bust' A mobile network has a typical ARPU (average revenue per user) of £30 per year. So yes margin is tight, to the point where one mobile phone network has made EVERY shop manager redundant come this April. Its a cut throat industry where you can earn big money, but the customer never wins believe me no deal is as good as you think it is.
