Assuming that it's only for racing then a lipo cut off isn't needed - in a 5 min race and a couple of minutes before you'll never get anywhere near capacity.
As far as I'm aware there is no good quality esc that won't take both lip and nimh, however if you're going to get 1 pack of lipo you won't need any nimh
