I strongly believe that Colin McRae Dirt2 with the controls setup like a stick transmitter will help your coordination and throttle control.
I have played it quite a bit on xbox and the way the car feels in the dirt, blending in just a little bit of throttle and being smooth on the steering is very good.
no doubt its not a substiture for actual track time, but getting good at dirt2 I think will make you better at off-road RC (as long as you set the controls as transmitter - steering with the left stick on any game is worthless)
in fact I believe games like Call of Duty are better for keeping your sharp than a racing game where you steer with your left thumb, its just un-natural.
call of duty using forward/back on the left thumb and rotate (steering) on the right thumb.
