Really reaching now but have you maybe got channel mixing activated in the transmitter? All setings for the throttle travel set to 100%?
Have you tried setting the response time in the transmitter to the slowest setting?
Have you recalibrated the speedo to the transmitter?
Is the servo jamming at the end of the travel? (does it buzz and try and travel further than it physically can when the steering is at max) - This could cause it to draw serious current and get hot too.
