Assuming you havent run it outside yet where are you testing it?
A few years back I had similar problems while pitting in the utility room, Turned out it was picking up interferance from the washing machine, and fish tank pump. Once it was outside in the garden all was well.
If your near any electrical source that could be your problem.
Also you say you took ages soldering in a new lead. If you left the iron on more than 2-3 secs the heat transfer could have damaged internal components in the servo.
Can you test it in another car?
