I personally run very little. My standard outdoor setup is just ~20g under the servo and ~15g around the receiver for left-to-right balance. This usually puts the car at about 1500g total.
At the Euro's on clay I did run about 60g at the rear and saddle packs, as I found it settled the car and made it easier to drive. If I had more time to set the car up it may not have needed it.
Adding weight tends to settle the car and make it easier to drive, which suits some people, whereas I like the car to be responsive which is best achieved with a light car.
