The WO universals are supposed to run smoother at large steering angles. It uses different knuckles and smaller bearings (950 instead of 1050). I don't have them and I don't like small bearings but as far as I have read, the bearings are up to the job.
The standard universals have the advantage of being compatible with more commonly found knuckles, although I have never broken a DB-01 knuckle before.
As for chassis... the carbon reinforced one is the stiffest and lightest and most expensive. It has holes under the motor and on the battery slots (so old NiMH cells could sit lower). The normal DB-01 kit one is made of a softer plastic and more flexible and has no large cutouts under the chassis. I think these may be out-of-production. The high traction chassis is the same as the soft plastic (DB-01 kit) except it has a cutout under the motor. You can cover this (but not 100% seal it) with the optional motor heatsink plate, but if you really need to cool your motor, I find it's better to leave it open to increase air flow. All three chassis are very durable.
