You may be dropping the voltage below the system Lipo cut off point. The ECU shuts down believing the cells have dropped below the safety voltage. The system cuts power, the voltage recovers and the ECU restarts. Remember under heavy load the current goes up but the voltage goes down.
The current is highest at low rpm and max load, therefore once the car is moving the current never pulls the voltage down low enough to trigger the safety cut off because the current is lower. It is only from low speeds and max acc, on a high grip tracks, you'll see the issue.
Lower the cut off voltage point to its minimum for the cells you are running. (NOT too low please!)
Up date the firm wear on the ECU. See the web site. There was an issue with the early code. The system now wait for a 500ms after the low voltage trigger before cutting the power.
