All cars will steer less when accelerating unless the only driving wheels are those that are steering, so yes.
You can set up your car's handling quite majorly by changing the differential's oils with those of a different weight. I won't recommend anything because I have no idea what car you have or what you want to use it for...and because I'm quite new in that respect. It's quite documented online though, Google it
