You're sort of along the right lines with the series, but way off with the parallel!
xS means the number of cells in series. Series connection sums the voltage. Since one cell (1S) is 3.7V, 2S is 7.4V, 3S is 11.1V etc.
yP means the number of sets of those series cells that are connected in parallel. Parallel sums capacity. So, a 2S1P is one set of 2S - still only two cells. 2S2P is two sets of 2S (four cells total); 2S3P is three sets (six cells total) etc.
Just multiply x and y to get the total number of cells in a pack.
Most LiPo sticks now are 2S1P. Saddles are mostly 2S2P.
