The ESC doesn't put amps into the motor - the motor demands amps from the battery via the ESC. If the motor and ESC are rated for 11.1V, and the setup is running OK at the moment, without excess heat, I imagine it will continue to run OK.

This is a forum populated by racers. We are all running 7.4V. Motors in buggies range from 5.5T to 8.5T.

Personally I don't see the point in 11.1V packs in 1/10th cars at all, because we can massively overpower them on 7.4V!
