It may be because on some ESC's there is no allowance for a very short dip in the voltage - for example when you apply full throttle on a high grip track.
In cases like this the better ESC's recognise this as the voltage immediately rises and the ESC will operate as normal. Some will not recognise this and shut down as a safety measure, which can be frustating.
I know some drivers who have had this problem and run their ESC on Nimh mode rather than Lipo to stop this happening. They NEVER EVER run the battery down to anywhere near the limit as a precaution to ensure the nominal voltage is always higher than 6v
It may be a reason for putting the cut off down to 2.6V.
However, I repeat you must NOT run the battery down to below 6V under normal running
