After checking the side-to-side balance (and also the 'tweak', 'diagonal weight' or 'wedge'), here's another vote for turning the brakes down (or learning to ease off them and correct the steering as the car starts to slide).
There's just no way you can hope to stop a car in a straight line, on a loose surface, by just slamming on the brakes on the rear wheels. There's a reason that 1:1 cars do most of the braking on the front wheels, and that Hollywood likes using the handbrake...
