It depends on the track you're running at. Your goal would be to have the car reach top speed around about the halfway mark on the straight or to have it geared to last you the amount of time of the race plus a minute or so.
Try going up by about two teeth at a time and see how it feels then when you run it. Keep checking motor temperature every two-three minutes if you are weary of the gearing you've got it on to make sure things aren't burning up.
