12 and 14 gauge wiring

Can anyone advise me the differences between using 12wg and 14wg wiring on my speedcontrol ?

12awg is slightly thicker than 14awg. And thicker wire has a lower resistance meaning more current will flow. As when the flow of electrons along the wire encounter resistance the voltage goes up to counter it and to keep the power factor the same the current will go down meaning less speed etc. As per Power = Voltage x Current.

BUT you cant tell the diffrence these days. I use 14awg as i can get it in the speedo easier.

You can tell the difference in 1/8th scale! But some ESC manufacturers include 14awg wire with their ESCs (I think Novak wire is 14awg), so it shouldn't be a problem.
