diff oil

I have just put in a geared diff with 5k oil in as this seems to be the norm
I also have 3k and 7k oil and was wondering what difference these would make to the car

as i understand it the more grip that is avalible the thiker the oil
but out door i normaly run 3000 and indoor with carpet hi grip i run 4000/5000
